Tara Stiles occasionally posts hilariously bad cooking videos on her tumblr site.  They’re completely tongue in cheek (she once did an instructional video on how to make ‘smiley’ toast) and a bit slap-dash but fun.  This week she made vegan French toast and so I decided that I needed to make vegan French toast too.  I tweaked her recipe quite a bit; she used almond milk, but I prefer coconut, and I added some vanilla for a bit of a kick.  

Vegan French Toast
Serves 2 small appetites, or 1 very hungry person

½ large banana
½ cup coconut milk (or non-dairy milk of your choice)
1 tsp vanilla essence
2 slices bread (I used sprouted whole wheat with seeds)
1 tbsp vegan margarine or oil
Cinnamon, to taste
Syrup and berries to serve

Blend together banana, milk and vanilla in a small food processor.  Pour into a shallow bowl and immerse the bread, one slice at a time. 

Heat a fry pan over medium-high heat and melt margarine or oil.  Place the bread in the fry pan and sprinkle with cinnamon.  Cook for two minutes, or until the bread is lightly golden.  Flip, sprinkle with cinnamon again and cook for another two minutes, or until toasted to your liking. 

Serve with your choice of maple or agave syrup and top with fresh berries.
