Every yogi knows that old conundrum – to eat, or not to eat before class.  I didn’t teach until 9.30 am this morning so I had to have something to keep me going until almost lunch time.  Usually I will just have some fruit or a fresh juice but I was ravenous today so served up a banana split.  Warning – this recipe does not include ice cream, cream, chocolate sauce or cherries.  Sorry…

Morning Banana Split (Serves 1)
2 tbsp raw muesli (or naked oats if you don’t want dried fruit or nuts)
1 tsp cacao nibs
1 ripe banana, sliced in half
2 tsp coconut oil
¼ cup frozen blueberries
1 tsp agave syrup

Pour the muesli and cacao nibs into a clean non-stick frypan and cook over medium heat until golden, just a minute or two.  Remove from the pan and set aside. 

Melt the coconut oil in the frypan.  Place the banana halves in the pan with the cut side down and fry until golden.  Flip the banana and continue to fry for another minute.  Remove from the pan and place in a shallow bowl. 

While the banana halves are cooking, place the blueberries in a microwave safe bowl with the agave syrup.  Cook in the microwave for about 40 seconds, until completely defrosted and bubbling slightly.  Stir the blueberries and pour over the banana.  Top with the crispy muesli mixture.
